The Story

Kolla Bolcha is a reminder that the best coffees don't need to be complicated. This washed Ethiopian from Greater Goods Roasting delivers peach syrup sweetness, delicate honeysuckle florals, and a cashew butter richness that lingers long after the cup is empty. Bright but silky, structured but approachable—it's the kind of coffee that makes you pause and appreciate what's in your hands.

Sourced from 759 smallholder farmers in the Agaro region of Oromia's Jimma Zone, this lot showcases everything that makes Ethiopian coffee legendary: clarity, vibrant fruit, and a honeyed balance that only deepens over time. Grown at elevations between 1,900 and 2,200 meters above sea level, these heirloom varieties thrive in Agaro's high-altitude, rain-rich environment and sandy soils.

The Kolla Bolcha washing station in Kimbibit takes meticulous care with every cherry. After depulping with Penagos machines, the beans are soaked overnight to remove residual sugars, then dried slowly on raised beds for 6–8 hours daily over the course of a week. Frequent turning ensures even drying and a clean, expressive cup that truly honors the terroir.

Tasting Notes

Expect peach syrup sweetness right up front, followed by floral honeysuckle aromatics and a creamy cashew butter body. The acidity is bright and clean without being sharp, and the finish is long and structured—sweet, balanced, and satisfying. This is a coffee that evolves beautifully in the cup as it cools, revealing new layers with every sip.

Brew Methods

Kolla Bolcha shines in methods that highlight clarity and sweetness. Pour over (V60, Kalita Wave) brings out the floral brightness and fruit-forward character. Chemex emphasizes the silky body and honeyed finish. If you're pulling espresso, expect juicy acidity and syrupy texture that works beautifully in milk or on its own. French press drinkers will enjoy the full-bodied richness and lingering cashew notes.
